刺身味のための原料
(1人前)

1あらじ – あじ
水に浸した大根の細切り
4しその葉
½〜1大さじ干し海藻サラダ
わさび
おろしショウガ

材料(1人分)
アジ(刺身用):1尾
大根の千切り(極細):適正量(極細く切って水にさらしたもの)
大葉:4枚
海藻サラダ:大1/2(乾燥タイプなので袋の表示時間どおり水に浸けて戻っておく)
練りささび&おろし生姜。

    The inclusion of the fish head as a garnish was a bit creepy, but it was definitely interesting to see how chefs are able to cut the meat away from the skeleton.

  29. I am confused as to why so many people can't stomach this video. Chef has cut up fish in many videos before this one.
    If it is the inclusion of the head on the plate then you can simply omit that in your own plating.
    The inclusion really is a testament to the freshness of the ingredient though. The eyes of fish go white the longer they are dead, and so to have such clear eyes means this was a very fresh fish.
    I don't know. Perhaps I am in the minority in this opinion but food doesn't just appear in this world ready made and appealing. It comes from somewhere.
    And you should respect it for what it is and learn to make peace with it rather than covering it up.

    PS: Also, you have to buy sushi grade fish when you intend to eat it raw to minimalize bacteria transmission and such. So you don't have to worry about the safety of this dish. Also, real wasabi naturally kills bacteria. That is actually why it is served with sushi and such in the first place. So if you're really worried, heap on the wasabi.

  31. I prefer sushi and sashimi in Japanese restaurants like Kobé's. I know that it's cleaned properly there. I feel like if I do it, I'd make myself sick!! XD

  32. To all who think there is a lot of bacteria when you defrost the fish, you don't defrost it… The fish is fresh meaning it would have very little bacteria because of the little amount of time the bacteria could spread…
